Made with a flaky pie crust and loaded with bacon, cheddar cheese and onions, this has become a favorite around here. . . and not just for breakfast! A great thing about this easy quiche recipe is it can be made with no crust if you are gluten free, or don’t have time to make the crust. I will explain more below, but you can also change up the add-ins and do ham, different kinds of cheese, etc. The options are endless!

Ingredients you will need for this easy quiche recipe
- An Unbaked Pie Crust
- Eggs
- Milk
- Heavy Whipping Cream
- Salt & Pepper
- Garlic Powder
- Cheddar Cheese
- Cooked Bacon
- Onion
- Fresh Dill & Parsley
Step by Step Instructions
Blind baking the crust
Start by rolling out your pie crust dough and pressing into a 9″ pie pan. Place in the fridge to chill for an hour. Preheat oven to 375 F. Put a piece of parchment paper on the bottom of the crust and then pie weights on top to hold the crust down. Place in the oven and bake for 15 minutes. Remove from the oven and take the parchment paper and the weights out. Put the crust back into the oven for another 7-8 minutes, then take out and set aside. At this point the crust is pretty well baked and you are ready to add the filling!
Prepare all the add-ins. Shred the cheese, and chop the bacon, onion and herbs. In a small bowl, whisk up the eggs, milk, heavy cream, salt, pepper and garlic powder. Put the chopped bacon and onion on the bottom of the crust, and then pour the egg and milk mixture over the top. Sprinkle on the chopped herbs, and then top everything off with all the cheese. Place in the oven to bake for 40-45 minutes. Half way through, you may need to put a piece of tin foil on top to prevent the crust from browning too much.
Once the quiche is out of the oven, try and let it sit for 10-15 minutes before slicing. Enjoy!
The versatility of quiche
You could replace the bacon for ham, sausage- the options are endless. Do a spinach, tomato and feta cheese quiche. As long as you use the base recipe that I’ve provided down below, you can use any kind of add-ins you’d like. There are about 2 cups of add-ins, so try to stick to that amount with the add-ins
Easy Bacon and Cheese Quiche Recipe
The Base
- 1 unbaked flaky pie crust
- ½ cup milk
- ½ cup heavy whipping cream
- ½ tsp salt
- ½ tsp garlic powder
- ¼ tsp pepper
The add-ins
- ¾ cup chopped bacon (cooked)
- ½ cup chopped white onion
- 1½ cup shredded sharp cheddar cheese
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh parsley
Blind Bake the Crust (for a crust that is not pre-baked)
Roll the dough out and press into a 9" pie pan. Don't cut off any excess dough along the sides, but instead fold it over and crimp to create a nice edge. Place the pie crust in the fridge for at least 45 minutes before baking.
Towards the end of the pie crust's time in the fridge, preheat the oven to 375℉
Place a piece of parchment paper on the bottom of the crust and put pie weights or dried beans on top to weigh the crust down while it blind bakes. Bake for 15 minutes. Remove from oven and carefully take the parchment paper out. Poke holes in the bottom of the crust and return to the oven to bake for another 7-8 minutes, then take out and set aside.
Reduce the oven to 350℉.
Shred the cheese, and chop the herbs, bacon and onion. Set the herbs and cheese aside, but sprinkle the onion and bacon on the bottom of the crust.
In a medium sized bowl, whisk the eggs, milk, heavy cream, salt, pepper and garlic powder well. Pour on top of the bacon and onions. Sprinkle the chopped dill and parsley on top, and finally, top everything off with the shredded cheese. Place in the oven and bake for 40-45 minutes. Halfway through you may need to cover the quiche with a piece of tin foil to prevent the crust edges from going too brown.
Once the quiche is out of the oven, let it cool for 15 minutes before slicing into it. Enjoy!
For no crust:
coat the pie pan with olive oil spray and everything else would be the same. . . add the onions, bacon, then pour the egg mixture in. Top with herbs and cheese.
