Cucumber and Tomato Pasta Salad

This refreshing cucumber and tomato pasta salad is not only delicious, but is quick and easy to make. Add some chopped onion and Italian dressing, and you have the perfect summer lunch! What I love about this is that if you don’t feel like spending much time in the kitchen, this only takes about 15 minutes to make.

What kind of pasta can you use?

I like to use the white or whole wheat rotini pasta, but you could also use penne, bowties, or anything along those lines.

List of Ingredients

  1. 16 oz box of rotini pasta
  2. Cucumbers
  3. Cherry plum tomatoes
  4. White onion

The Dressing

  1. Extra virgin olive oil
  2. Red wine vinegar
  3. A packet of Good Seasons Italian dressing mix
  4. Dried oregano
  5. Dried basil
  6. Salt
  7. Pepper

Boil the pasta according to the instructions on the box. While it’s is boiling, quickly chop up the cucumbers, tomatoes and onions and whisk up the dressing. Combine all the dressing ingredients in a small bowl and whisk well. When the pasta is done, place everything in a large bowl and pour the dressing on top. Stir well and enjoy! Some people only prefer cold pasta salad so in that case you’d have to chill it for awhile. We like it hot or cold so whatever is left over, I just throw it in the fridge and someone will pull it out and finish it later.

Tips for making this cucumber and tomato pasta salad

-Try to acquire young, small cucumbers for this because large ones can have a bitter, tough skin on them and will completely ruin the salad! -Plum cherry tomatoes have less liquid in them and work a lot better for this salad than regular cherry tomatoes.

Cucumber & Tomato Pasta Salad

Delicious and refreshing, this is a quick and easy pasta salad

  • 16 oz box of rotini pasta
  • 2 cups cucumbers (cut into bite-sized pieces)
  • 2 cups sliced cherry tomatoes
  • ½ cup chopped white onion

The Dressing

  • ⅓ cup extra virgin olive oil
  • ⅓ cup red wine vinegar
  • 1 packet Good Seasons Italian dressing mix
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp pepper
  1. Boil the whole box of pasta according to the instructions on the box. Be sure to salt the water well.

  2. Chop up cucumbers, cherry tomatoes, and onion.

  3. Place cooked pasta in a large bowl and add the cucumbers, tomatoes and onion

  4. Combine all the dressing ingredients in a small bowl and whisk well. Pour over the salad and stir well. Enjoy!

This stores well in the fridge for up to 3 days

Be sure to use young cucumbers so you don’t get a bitter taste from the skin in the salad! 

Plum cherry tomatoes work the best for this as they don’t have as much liquid in them as regular cherry tomatoes.
