Homemade Strawberry and Pineapple Popsicles

These dairy free homemade popsicles are a refreshing treat during the summer. Not only are they a healthier alternative to store bought ones, they are filling snack as well! What ingredients are in these homemade strawberry and pineapple popsicles?

  • Unsweetened Almond Milk
  • Unsalted Cashews
  • Frozen Strawberries & Pineapple
  • A Ripe Banana
  • Raw Honey

These popsicles are quite simple to make! The only prep you will need to do is to soak the cashews in a bowl of water for 2-4 hours before before starting. After that, you just add all the ingredients to a blender and blend till smooth. You don’t want to skip soaking the cashews because this helps give the creamy consistency you want in the popsicles. Be sure to drain the water off of the cashews before adding them to the blender!

Homemade Strawberry and Pineapple Popsicle Recipe:

Ingredients

  • 1½ cups unsweetened almond milk
  • ¼ cup whole unsalted cashews soaked for 2-4 hours
  • 2 cups frozen strawberries & pineapple
  • 1 ripe banana
  • 2½ tbsp honey more or less to taste

Instructions

  1. 2-4 hours before making these, place cashews in a small bowl of water to soak
  2. In a blender add almond milk, cashews, frozen fruit, the banana and honey and blend till smooth
  3. Pour into popsicle trays (link to the ones I use here) and freeze overnight. Enjoy!

Changing things up + tips

You could replace the almond milk with regular milk, or canned coconut milk. Change up the fruit, or use maple syrup for a sweetener if you don’t like the flavor of honey. Unless you are using coconut milk-which is creamier than other kinds of milk- you will need to use cashews as those are what will give you a creamy consistency. Also, using an over-ripe banana is better than an under-ripe one
